Head pastry chef and owner, Ashlea Allen, uses her French training to create french inspired pastries with a rustic edge.

She completed her training at L'ecole Grégoire-Ferrandi, one of France's leading culinary training schools, where she learnt the fine art of Pâtisserie.

She then went on to work in Paris at world renowned, La Pâtisserie des Rêves (under her idol Philippe Conticini), followed by Le Grenier à Pain.

On her return to Australia she worked at Tivoli Road Bakery, as head pastry chef, for two years.
